This week’s TWD recipe was Chockablock Cookies chosen by Mary of Popsicles and Sandy Feet.
Do you ever get the impression that Dorie sometimes gets in the mood to empty out her pantry so she creates recipes with all sorts of things in it? Well, this is one of those recipes. It has oatmeal, nuts, dried fruit, chocolate chips, coconut, and a little bit of dough to hold them all together. These cookies have it all. Although that is not necessarily a bad thing.
These cookies almost remind me of a granola bar with all the oats, but better. They are chewie, just how I like them, and have great texture. These are cookies loaded with goodies, and they aren’t that unhealthy either. There really isn’t much butter or shortening in them. The moistness instead comes from the molasses, which adds a nice background taste. They could almost use some spices though like cinnamon, nutmeg or ginger. I think a spicy note would be nice in them.
Now the next time I have a pantry full of half gone ingredients like nuts and dried fruit I’ll know what to make. I’m sure there is a lot of room for variation in this recipe and still have them be delicious. If you want the recipe see Mary’s blog. Enjoy!
